To set up pairing, follow these steps:
open the Watch app on your iPhone
select the option to set up for myself and pair your new device
follow the steps in the app to get paired
If you're having difficulties setting up your Apple Watch via the app, try selecting cancel within the set-up and then try re-pairing to your iPhone.
Follow the below steps to unpair:
hold your iPhone and Apple Watch close together
open the Watch app on your iPhone
go to the My Watch tab and tap your watch at the top of the screen
tap i next to the watch that you would like to unpair
tap Unpair Apple Watch
tap to confirm – you will need to enter your Apple ID password to complete the unpairing. The Apple Watch will now be ready to pair again
Yes, unpairing your watch won’t affect any active data plans you have. Just tap the option Keep Data Plan when you re-pair your Apple Watch to your iPhone.

To set up a data plan, just use the Watch app.

Then, simply:

the app will then take you through setting up your Apple Watch
select Set up Mobile Data
log in using your EE login details
select the Apple Watch plan and agree to Terms

Unfortunately, roaming is not available on the Apple Watch Personal Paired plan. However, you’ll still be able to use most of the features if it’s connected to your phone via Bluetooth.
